It's hard to get motivated when cooking for one but I found a recipe that is fun and easy. I want to share my love of brinner and low budg yum with you, so enjoy!
Brinner in a Cup:
Four eggs
Cheese
Hash browns
Mushrooms
Garlic
Any kind of pepper
Sweet Onion
Asparagus
Bacon crumbles
Preheat oven to 350. Saute the veggies (basically any combo of the above works beautifully). Fry the hash browns in a pan. Coat four separate ramekins with cooking spray. Separate cooked hash browns evenly and line the ramekins with the hash browns. Place sauteed veggies on top. Bake for 5 minutes at 350. Remove ramekins from oven and turn up to the oven to 400 and place on broil. Sprinkle ramekin with cheese. Crack an egg in the center of each ramekin (it helps if you make a dent in the hash browns with a spoon) and add salt and pepper and more cheese (why not?). Broil for 5 minutes at 400. The eggs should be set and cheese should be slightly browned on top. Remove from oven and let set for 5 minutes and sprinkle with bacon crumbles. Eat out of the ramekin or eat like a lady off a plate.
Four ramekins serve 2.
